Torta autumn-style

Sommiamo: la pioggia battente di questi giorni ed il conseguente clima praticamente autunnale, una cassetta di bellissime e buonissime mele golden che papy mi ha regalato qualche giorno fa, le otto e mezza della domenica mattina con placida rassegnazione al dato di fatto che il grigiore là fuori imperversa ed uscire anche per la più banale passeggiata è praticamente missione impossibile, aggiungiamo un flebile ricordo di una ricetta dolce dolce che volevamo provare e la conta degli ingredienti che dopo vari aggiustamenti più o meno torna. Otteniamo una torta in perfetto autumn-stlyle, molto liberamente tratta dal Cavoletto di Bruxelles.
Torta di mele con crema di mandorle (e voglia di primavera)
Ingredienti
per la pastafrolla
250 gr di farina 00
90 gr di burro morbido
1 uovo +1 tuorlo
70 gr di zucchero
per il ripieno
3 mele golden
80 gr di mandorle
100 ml di panna liquida
2 cucchiai di zucchero
latte q.b.
poca cannella
Preparare la pasta frolla battendo le uova con lo zucchero e incorporandovi la farina col burro a pezzetti, impastando fino ad ottenere una bella pasta liscia e morbida. Mettere in frigo per almeno un’oretta, poi stenderla sottilmente con il mattarello e sistemarla in uno stampo da crostata imburrato, tenendone da parte un poco per le strisce di decorazione.
Tritare le mandorle col mixer in modo da ottenere una farina un po’ grossolana (le mie erano mandorle con la pelle). Sciogliere lo zucchero nella panna liquida e unirvi la farina di mandorle, allungare con un po’ di latte fino ad ottenere una consistenza cremosa.
Con una spatolina o il dorso di un cucchiaio, stendere uno strato di questa crema sulla pasta frolla, compresi i bordi. Spolverare appena di cannella. Sbucciare le mele e tagliarle a cubetti, condirle mescolando con la crema rimasta e riempire la torta.
Infine con la pasta rimasta tagliare delle strisce e comporre il classico disegno da crostata. Infornare a 180° per 30 minuti e lasciare in forno spento un altro quarto d’ora.
Io l’ho servita fredda ma mi sa che anche tiepida non era niente male, e magari insieme a un cucchiaio di gelato ai pinoli che ho visto l’altro giorno in pasticceria ma che ieri non ho proprio avuto voglia di uscire a comprare :-)
ah, l’indiscusso fascino delle torte di mele….
e già, in genere tiepide ci guadagnano, e poi più che mai profumano (viva il cattivo tempo :D)

Alcune preparazioni io le classifico nella categoria “fuori-stagione” che non è una categoria universale, ma estremamente personale: la torta di mele, secondo i miei gusti (criterio con il quale stilo la suddetta categoria) vi rientra a pieno titolo.
Sai che non ho mai assaggato il gelato ai pinoli?
