La ricetta piena di bugie

Carnevale per me non è una festa molto sentita, non amo le feste in maschera nè i cortei in strada per vedere i carri, e ancor meno il fatto che ogni scherzo vale. Sarà che non ho mai partecipato ad un carnevale storico, quelli proprio tradizionali e curatissimi, tipo quello di Venezia o magari Viareggio. Quelli me li immagino con maschere e costumi bellissimi, e un clima di meraviglia e gioia, e non solo di ilarità e burla, il chè potrebbe esercitare su di me un certo fascino e non il solito rifiuto. Quest’anno però, data una mia recente pace fatta con certi dolciumi e con certi apporti calorici, ho desiderato profondamente provare a fare le bugie in casa, memore di quando da piccola trovavo non ci fosse proprio paragone tra quelle della mamma e quelle del panettiere.
La ricetta è quella si famiglia, appartiene alla tradizione orale, per cui è intrinsecamente imprecisa e soggetta a variabili personali, evocative e correttive, e a me è giunta piena di ‘meglio senza burro’, ‘forse un po’ più di lievito…’, e ‘troppo poco zucchero’. Alla fine ho dosato anche un po’ ad occhio, e dal momento che sto postandola pongo fine ad una lunga tradizione di ricette tramandate nelle chiacchiere invernali della domenica pomeriggio.
Bugie di Carnevale
Ingredienti:
300 gr di farina 00
2 uova grandi
30 gr di zucchero a velo + q.b. per coprire
30 gr burro morbido
2 cucchiai di Marsala
1 cucchiaino di lievito per dolci
la scorza di un limone grattuggiata
Mettere la farina a fontana sulla spianatoia e depositare al centro le uova, lo zucchero, il burro a pezzetti, il Marsala e la buccia di limone. Pian piano iniziare a sbattere le uova con una forchetta, incorporando un po’ alla volta la farina. Aggiungere il lievito e lavorare con la punta delle dita, per poi impastare per qualche minuto sul piano infarinato, finchè l’impasto sarà liscio ed elastico. Lasciar riposare una mezz’ora, poi dividere la pasta in quattro parti e tirarle a sfoglia con la macchina Imperia (o se preferite col mattarello) fino a uno spessore di circa 1 mm. Tagliare a striscie con la rotella e friggerle in olio profondo ben caldo, rigirandole un po’ per lato e facendole dorare un poco. Asciugare sulla carta cucina e cospargere di zucchero a velo usando il setaccio o un colino a trama fitta. Volendo con lo stesso impasto si possono preparare anche le bugie ripiene, basta mettere la marmellata o la crema di cioccolato su un disco di pasta e chiudere a mezzaluna sigillando bene prima di friggere.
