Brisè con fonduta di parmigiano e carciofi

La foto proprio non rende giustizia a questa torta salata, scattata al volo nel bel mezzo dei preparativi per il pranzo di Pasqua, mentre aspettava il suo turno per tornare in forno, tra l’uscita delle pastiere e l’entrata della teglia di patate al rosmarino. Se fosse un film si direbbe ‘liberamente ispirato’ dal blog di Campodifragole, che ho scoperto da poco e con vero piacere. La brisè con i semi di papavero l’avevo già fatta per questi biscotti, rivisti di recente anche qui e anche qui, per i carciofi si sa che ne vado matta, mentre la fonduta di parmigiano è stata una scommessa, sono andata a occhio ed è andata bene. In abbinamento praticamente perfetto suggerirei un Franciacorta Satèn docg, buono almeno quanto il Magnificentia di Uberti. La pungenza delle bollicine armonizza la componente grassa della pasta e del formaggio, mentre l’intensità olfattiva e la morbidezza vanno a nozze con i carciofi sempre un po’ esuberanti. Un connubio che mette allegria e fa subito festa.
Brisè con fonduta di parmigiano e carciofi
Ingredienti
200 gr di farina 00
100 gr di burro
1 tuorlo
1 presa di sale
50 gr di parmigiano (per la pasta)
2 cucchiai di semi di papavero
2 carciofi (il cuore e i gambi teneri)
1 spicchio d’aglio
sale
2 cucchiai di extra vergine
100 gr di parmigiano grattugiato (per la fonduta)
200 ml di panna fresca
mezzo bicchiere di latte
1 tuorlo
poco sale
Mettere la farina a fontana e impastarla con il burro morbido e un tuorlo, una presa di sale, i semi di papavero e un po’ di parmigiano grattugiato. Se sembra troppo dura aggiungere un goccio d’acqua. Lavorare velocemente fino ad ottenere una pasta omogenea e morbida, poi avvolgere nella pellicola e far riposare in frigo almeno mezz’ora.
Intanto pulire i carciofi, tagliare a striscioline sia i gambi che i cuori e farli cuocere in padella con il coperchio con uno spicchio d’aglio, olio extra vergine, sale e un poco d’acqua. Quando saranno morbidi e ben cotti togliere l’aglio e lasciarli raffreddare un po’.
Riprendere la pasta e stenderla su un foglio di carta da forno infarinato fino ad uno spessore di 4 o 5 mm. e posizionare il tutto nella teglia da crostata. Bucherellare il fondo con una forchetta, coprire con un altro foglio di carta da forno (deve aderire) e infornare per una decina di minuti a 180 gradi.
In un pentolino stemperare il parmigiano nella panna, mettere sul fuoco, aggiungere il latte e il sale, e mescolando sempre portare quasi ad ebollizione. Aggiungere il tuorlo e mescolare ancora per qualche minuto, mantenendo la temperaura alta ma senza far bollire. La fonduta dovrà risultare ancora abbastanza liquida per completare la cottura in forno.
Prelevare la tortiera dal forno, togliere la carta superficiale e versare la fonduta nella brisè semi cotta. Spargere i carciofi sulla fonduta e spolverare con una generosa manciata di parmigiano. Infornare a 180 gradi per altri 20 minuti circa, poi far raffreddare completamente a temperatura ambiente prima di servire.
