Semplice come il pane

Impastando gli Hot Cross Buns mi è balzato in mente, senza alcuna premeditazione, di imbarcare un lievito madre. Così ho rispolverato la ricetta di Spilucchina che già era stata illuminante in passato, e impastato velocemente pane, acqua, olio e miele. Seppur facendo lo slalom tra i nostri frequenti traslochi e rinfreschi non proprio puntualissimi, il lievito è nato! e io sono una mamma ancora più felice :) infatti mia figlia ogni volta che mi vede impastare, sale in ginocchio sulla sedia a fianco a me e mi chiede ‘posso aiutarti?’ e anche ‘adesso appiccica?’ e dice cose come ‘poi la portiamo a nonna la focaccia’ che raddoppiano la dose di soddisfazione che già risiede nel fatto stesso di impastare, milionizzato dal farlo col lievito madre.
Di fatto questo è un pane proprio basic, ma quel che c’è da dire rispetto al passato è che ho cambiato farina e potuto constatare che c’è un abisso nella vivacità del lievito e nella bontà del prodotto, sotto il profilo organolettico certo, ma soprattutto nella lievitazione vera e propria. Miglior alveolatura, miglior consistenza soffice ed elastica, miglior assorbimento dell’acqua con conseguente maggior quantità di acqua utilizzata e impasti più soffici e ricchi. Prima usavo principalmente la Manitoba che compravo al supermercato; ora compro una farina bio di tipo 0 che prendo al negozio di alimentazione naturale dove vado adesso e davvero consiglio a tutti di cambiare, perchè la spesa vale in risultati e soddisfazioni.
Pane semplice con lievito madre
Ingredienti
180 gr di lievito madre
250 gr di farina di grano tenero bio tipo 0 Antico Molino Rosso
150 gr di farina di grano tenero bio tipo 00 Ecor
350 ml acqua
2 cucchiaini di sale fino (anche 3 volendo)
Per questo pane la lavorazione è breve ma sono necessarie 24 ore di lievitazione.
Al mattino rinfrescare il lievito madre con 100 g di farina 0 e circa 50 ml di acqua. Impastare per una decina di minuti e riporre in frigo chiuso in un contenitore ermetico.
Alla sera riprendere la pasta e impastare con le rimanenti farine, l’acqua e il sale. Lavorare bene l’impasto finchè non sia omogeneo, morbido ed elastico, impastando per almeno un quarto d’ora. Se la consistenza lo consente impastare con le mani bagnate di altra acqua, per fare in modo che l’insieme sia bello umido.
Mettere a lievitare in forno spento in una ciotola coperta con un canovaccio per tutta la notte. Io l’ho lasciato 12 ore precise, e al mattino trasferire il pane in una teglia da forno. Qui no so mai bene che forma dargli, mi devo documentare, perciò l’ho lasciato per l’ennesima volta così com’era. Infornare in forno già caldo a 200° circa per 25 minuti o mezz’ora. Sfornare e far raffreddare su una gratella. Il pane si mantiene per qualche giorno in un sacchetto di carta.

Non sai quanto siamo tentati dall’iniziare l’avventura con il lievito madre… ma poi siamo sempre titubanti all’idea di non riuscire a seguirlo come merita.. poi capito in post come il tuo e mi torna l’ispirazione… argh!!! che dilemma!

Saretta, anche io metto la semola, di solito però nell’impasto della pizza/focaccia, mescolata con la farina 0. Al negozietto però quella dell’antico molino rosso non ce l’hanno e dovrò cercarla altrove… baci
Fico&Uva, guarda, in effetti non è che richieda chissà cosa..per i rinfreschi bastano dieci minuti ogni tre o quattro giorni, ma la soddisfazione è senza pari. Io ho fatto delle brioche l’altra settimana che non potevo crederci neanch’io… :)
